Ingredients:

  • 2 cups of crushed digestive biscuits (graham crackers can be used as a substitute)
  • 1/2 cup of melted unsalted butter
  • 3 packages (24 ounces) of cream cheese, softened
  • 1 cup of granulated sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1/4 cup of Baileys Irish Cream liqueur
  • 1 cup of heavy cream
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions:

  1. Preheat your oven to 325°F (160°C).

  2. In a mixing bowl, combine the crushed digestive biscuits and melted butter until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan, forming the crust. Place the pan in the refrigerator while you prepare the filling.

  3. In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and Baileys Irish Cream liqueur.

  4. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

  5. Pour the cheesecake filling over the chilled crust in the springform pan, spreading it evenly.

  6. Place the pan in the preheated oven and bake for about 60-70 minutes or until the edges are set and the center is slightly jiggly.

  7. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour to cool gradually. Then, remove it from the oven and let it cool completely at room temperature.

  8. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to set.

  9. Before serving, garnish the cheesecake with chocolate shavings or dust with cocoa powder if desired.

  10. Slice and serve the Baileys cheesecake chilled. Enjoy!
